Chinese Recipes - Beef and Turnip Soup with Watercress Recipe
Ingredients
- 450-675 g (1-1 1/2 lb) beef (for stewing or braising)
- 225 g (1/2 lb) turnips
- 1 bunch watercress
- 3 slices foot ginger
- 1 liter (2 pints) water
- pepper to taste
- 10 ml (2 teaspoons) salt
- 1 beef or chicken stock cube

Method:

Cut the beef into small cubes and the turnips into similar-sized triangular wedges. Clean the watercress thoroughly and remove the roots.

Place the beef and ginger in 500 ml (1 pint) of water in a sauce pan. Bring to the boil and simmer until the liquid has Been reduced to half (about 45 minutes). Skim off any impurities, and discard the ginger.

Add the turnips, salt and pepper and the remaining water. Bring to the boil, and simmer gently together for 1 1/2 hours. Add the stock cube and watercress. Stir and continue to heat for 5 minutes.
Note: Turnips are much more frequently used in soups in China than in the West. They are most often used in conjunction with strong tasting meat such as beef.
