Chinese Recipes – Beef and Watercress Soup Recipe

Ingredients

  • 225 g (1/2 lb) stewing beef
  • 1-2 bunches of watercress
  • 750 ml (1 1/2 pints) water
  • 750 ml (1 1/2 pints) stock
  • salt and pepper to taste

Serve 4-6

Method:

  1. Cut the beef into small cubes. Clean the watercress thoroughly, and remove the roots.
  2. Place the beef and water in a saucepan. Boil for 5 minutes and skim away any impurities.
  3. Reduce the heat to very low, and simmer very gently for 1 1/2 hours. Add the watercress and stock.
  4. Simmer gently for 5-6 minutes. Adjust the seasoning and serve.
