Chinese Recipes – Beef and Watercress Soup Recipe

Ingredients
- 225 g (1/2 lb) stewing beef
- 1-2 bunches of watercress
- 750 ml (1 1/2 pints) water
- 750 ml (1 1/2 pints) stock
- salt and pepper to taste
Serve 4-6

Method:

Cut the beef into small cubes. Clean the watercress thoroughly, and remove the roots.

Place the beef and water in a saucepan. Boil for 5 minutes and skim away any impurities.

Reduce the heat to very low, and simmer very gently for 1 1/2 hours. Add the watercress and stock.

Simmer gently for 5-6 minutes. Adjust the seasoning and serve.
