Chinese Desserts, Cakes and Confectionery Recipes - Almond Biscuits Recipe

Ingredients

  • 100g/4oz self-raising flour

  • 5ml/1 tsp baking powder

  • 50g/2 oz lard

  • 100g/4oz sugar

  • 2 eggs, beaten

  • 12 almonds


Method:

  1. Mix the flour and baking powder then rub it the large until mixture resemble breadcrumbs.

  2. Mix in the sugar and 1 egg to form a thick paste. Divide into 12 balls and pres into circles on a greased baking tray. Press an almond on to the top of each one.

  3. Glaze with the remaining egg and bake in a preheated oven at 200C/400F/gas mark 6 for 20 minutes until golden brown. Cool on a wire rack.
