Chinese Desserts, Cakes and Confectionery Recipes - Almond Milk Jelly with Lychees Recipe

Ingredients

  • 75ml/5 tbsp water

  • 15g/1/2oz gelatin

  • 250ml/1 cup milk

  • 50g/1/4 cup brown sugar

  • 5ml/1 tsp almond essence

  • 400g/14oz canned lychees in syrup


Method:

  1. Mix together the water and gelatin and heat gently over a bowl of warm water until the gelatin dissolves.

  2. Bring the milk to the boil the stir in the sugar until it dissolves. Stir in the gelatin mixture hen the almond essence.

  3. Remove fro the heat and continue to stir until all the ingredients are well mixed. Pour into a dish and cool then chill until set.

  4. Cut into cubes and arrange in dessert bowls then top with the lychees and syrup.
