Candied Peel Recipe
Ingredients

rind of 1 lemon
-
rind of 1 orange
-
rind of 1 grapefruit

450g/1 lb sugar
-
250ml/1 cup water
-
pinch of salt
Method:
-
Cut the rinds
into thin strips and place in a pan. Cover with
water, add the salt, bring to the boil and simmer
for 30 minutes then drain.

Mix the sugar
with the water, bring to the boil and simmer until a
syrup is formed.

Add the rinds and
simmer until the rinds are tender and clear.

Remove from the
pot and spread out on non-stick paper to dry. Store
the excess syrup for future use.
