Ingredients

  • rind of 1 lemon

  • rind of 1 orange

  • rind of 1 grapefruit

  • 450g/1 lb sugar

  • 250ml/1 cup water

  • pinch of salt


Method:

  1. Cut the rinds into thin strips and place in a pan. Cover with water, add the salt, bring to the boil and simmer for 30 minutes then drain.

  2. Mix the sugar with the water, bring to the boil and simmer until a syrup is formed.

  3. Add the rinds and simmer until the rinds are tender and clear.

  4. Remove from the pot and spread out on non-stick paper to dry. Store the excess syrup for future use.
