Ingredients

  • 100g/4 oz/1/2 cup butter

  • 100g/4 oz/1/2 cup brown sugar

  • 3 eggs, separated

  • few drops of vanilla essence

  • 225g/8 oz plain (all-purpose) flour

  • 10ml/2 tsp baking powder

  • pinch of salt

  • 45ml/3 tbsp milk

  • 175g/1 1/4 cups mixed nuts

  • 25g/2 tbsp caster sugar


Method:

  1. Cream the butter and sugar and add the egg yolks and 1 egg white and beat well.

  2. Add the vanilla essence flour, baking powder, salt and milk.

  3. Spread the mixture into a greased rectangular baking tin and sprinkle with the nuts.

  4. beat the remaining egg whites until stiff, add the caster sugar and beat again until stiff.

  5. Spread over the mixture and bake in a preheated oven at 180C/350F/gar mark 4 for 35 minutes. Cool and cut into squares.
