Chinese Desserts, Cakes and Confectionery Recipes - Ice Cream Puffs Recipe

Ingredients

  • 5 cups vanilla ice cream

  • 4 eggs, beaten

  • 25g/1/4 cup plain (all-purpose) flour

  • 2.5ml/1/2 tsp baking powder

  • oil for deep-frying


Method:

  1. Divide the ice cream into scoops and freeze until very heard.

  2. Beat the eggs, flour and baking powder, coat the ice cream with the mixture and freeze again until hard.

  3. Heat the oil and dip the ice cream again in the batter mixture.

  4. Deep-fry for a few seconds until the pastry covering puff up. Serve immediately.
