Peanut Crisps Recipe
Ingredients
50g/2 oz sesame seeds
450g/2 cups sugar
75ml/5 tbsp wine
vinegar
20ml/2 tsp water
225g/2 cups roast
unsalted skinned peanuts
Method:
Toast the sesame
seeds in a dry pan until golden. Mix the sugar, wine
vinegar and water in a saucepan and cook over a low
heat, stirring as the sugar dissolves.
Bring to the boil
without stirring. Boil, without stirring, for about
10 minutes until the mixture is golden and reaches
149C/300F or hard-crack stage.
While the sugar
is boiling, grease a large baking tin. Sprinkle half
the sesame seeds and all the peanuts evenly into the
tin.
Pour the sugar
over the nuts and smooth the surface with the back
of a greased wooden spoon.
Sprinkle with the
remaining sesame seeds and lave to cool slightly.
While still warm,
cut into squares then leave to cool completely.
