Chinese Desserts, Cakes and Confectionery Recipes - Peanut Crisps Recipe

Ingredients

  • 50g/2 oz sesame seeds

  • 450g/2 cups sugar

  • 75ml/5 tbsp wine vinegar

  • 20ml/2 tsp water

  • 225g/2 cups roast unsalted skinned peanuts


Method:

  1. Toast the sesame seeds in a dry pan until golden. Mix the sugar, wine vinegar and water in a saucepan and cook over a low heat, stirring as the sugar dissolves.

  2. Bring to the boil without stirring. Boil, without stirring, for about 10 minutes until the mixture is golden and reaches 149C/300F or hard-crack stage.

  3. While the sugar is boiling, grease a large baking tin. Sprinkle half the sesame seeds and all the peanuts evenly into the tin.

  4. Pour the sugar over the nuts and smooth the surface with the back of a greased wooden spoon.

  5. Sprinkle with the remaining sesame seeds and lave to cool slightly.

  6. While still warm, cut into squares then leave to cool completely.
