Chinese Desserts, Cakes and Confectionery Recipes - Pear Barley Pudding Recipe

Ingredients

  • 100g/1 cup pearl barley

  • 450g/2 cups water

  • salt

  • 225g/2 cups brown sugar

  • 450ml/2 cups milk

  • 100g/1 cup walnuts

  • 50g/1/2 cup raisins

  • 2.5ml/1/2 tsp cinnamon


Method:

  1. Place the pearl barley, water and salt in a pan, bring to the boil, cover and simmer for 1 hour.

  2. Transfer the barley to the top of a double boiler and stir in the sugar and milk.

  3. Bring the water in the bottom to the boil and cook for 3 hours over a low heat.

  4. Blanch the walnuts in boiling water for 5 minutes then drain and chop.

  5. Add to the barley mixture with the raisins and simmer for a further 15  minutes.
