Barley Pudding Recipe
Ingredients

100g/1 cup pearl barley
-
450g/2 cups water
-
salt
-
225g/2 cups brown sugar
-
450ml/2 cups milk
-
100g/1 cup walnuts
-
50g/1/2 cup raisins
-
2.5ml/1/2 tsp cinnamon
Method:
-
Place the pearl
barley, water and salt in a pan, bring to the boil,
cover and simmer for 1 hour.

Transfer the
barley to the top of a double boiler and stir in the
sugar and milk.

Bring the water
in the bottom to the boil and cook for 3 hours over
a low heat.

Blanch the
walnuts in boiling water for 5 minutes then drain
and chop.

Add to the barley
mixture with the raisins and simmer for a further 15
minutes.
