Ingredients

  • 350g/12oz raspberries

  • 30ml/2 tbsp sugar

  • 250ml/1 cup double cream


Method:

  1. Puree the raspberries then rub them through a sieve if you prefer not to have pips in the fool.

  2. Stir in the sugar. Whip the cream until stiff then gently fold it into the raspberries.
