Chinese Desserts, Cakes and Confectionery Recipes - Rice Pudding with Candied Fruits Recipe

Ingredients

  • 150g/5oz short-grain rice

  • 150ml/2/3 cup water

  • 150ml/2/3 cup rice wine or dry sherry

  • 150ml/2/3 cup milk

  • 50g/1/4 cup sugar

  • 25g/1 oz candied ginger, chopped

  • 25g/1 oz candied pineapple, chopped

  • 25g/1 oz glace cherries, chopped

  • 25g/1 oz chopped mixed peel

  • 120ml/1/2 cup double cream

  • 300ml/1 1/4 cups whipping cream, whipped

  • 50g/2 oz candied kumquats or other fruits, sliced


Method:

  1. Soak the rice in the water for 2 hours. Bring to the boil with the wine or sherry and milk and simmer for about 20 minutes until tender.

  2. Add the sugar, fruits and cream and leave to cool. When cold, blend in the whipped cream and decorate with kumquats.
