Chinese Desserts, Cakes and Confectionery Recipes - Split Pea Pudding Recipe

Ingredients

  • 675g/1 1/2lb split peas

  • 500ml/2 1/4 cups water

  • 100g/1/2 cup brown sugar

  • 30ml/2 tbsp corn flour

  • 60ml/4 tbsp water

  • 100g/4oz maraschino cherries


Method:

  1. Soak the split peas overnight in the water. Bring to the boil in the same water, cover and simmer for about 2 hours until tender.

  2. Rub through a fine sieve then stir in the sugar and return to a very low heat.

  3. Mix the corn flour with the water then stir into the pan. Pour into a shallow rectangular cake tin and leave to cool then chill until set.

  4. Cut into cubes, pile into a bowl and serve garnished with cherries.
