Chinese Desserts, Cakes and Confectionery Recipes - Steamed Lemon Cake Recipe

Ingredients

  • 6 eggs, separated

  • 225g/1 cup sugar

  • 34ml/3 tbsp water

  • 175g/1 1/2 cup plain (all-purpose)  flour

  • 2.5ml/1/2 tsp baking powder

  • 2.5ml/1/2 tsp vanilla essence

  • 5ml/1 tsp lemon essence


Method:

  1. Beat the egg yolks, sugar and water until pale and fluffy.

  2. Gradually beat in the flour and baking powder then the vanilla and lemon essence.

  3. Beat the egg whites until stiff an d fold them into the mixture using a metal spoon.

  4. Pour the batter into a greased and lined 20 cm/8 in square cake tin and stand the tin on a steamer rack in a wok or pan over simmering water.

  5. Cover and simmer for about 25 minutes until a skewer inserted in the centre comes out clean.

  6. Leave to cool slightly in the tin then turn out and serve hot, cut into squares.
