Chinese Desserts, Cakes and Confectionery Recipes - Toffee Apples Recipe

Ingredients

  • 3 firm dessert apples, peeled and cut into wedges

  • 50g/2 oz plain flour (all-purpose)

  • 1 egg

  • 5ml/1 tsp sesame oil

  • 300ml/2/3 cup peanut oil

  • 175g/6 oz sugar

  • 30ml/2 tbsp sesame seeds


Method:

  1. Mix together the flour, egg and sesame oil to a smooth batter. Add the apples.

  2. Heat the peanut oil and deep-fry a few pieces of fruit at a time for about 2 minutes until golden brown.

  3. Drain on kitchen paper and keep then warm while you fry the remaining fruit pieces.

  4. Reheat the oil and deep-fry the fruit for a further 2 minutes then drain on kitchen paper.

  5. Meanwhile, mix the sugar, sesame deeds and 30ml/2 tbsp oil form the deep-frying pan and heat until the mixture begins to caramelize.

  6. Stir the fruit into the caramel a few at a time then place them in iced water to harden. Remove from the water and serve at once.
