Chinese Nibbles and Drinks Recipes - Crispy Pine Nuts Recipe

Ingredients

  • 50 g/2 oz brown sugar

  • 450 ml/2 cups water

  • 100 g/4 oz pine nuts

  • oil for deep-frying


Method:

  1. Dissolve the sugar in the water over a low heat, add the pine nuts and bring to the boil.

  2. Simmer for 3 minutes then remove from the heat and leave to stand for 6 hours. Drain well and leave to dry.

  3. Heat the oil until moderately hot and deep-fry the pine nuts until golden brown.

  4. Drain well then spread out and leave to cool, stirring occasionally so that they do not stick together.
