Ingredients

50 g/2 oz brown
sugar
-
450 ml/2 cups water
-
100 g/4 oz pine
nuts
-
oil for deep-frying
Method:

Dissolve the sugar in the water over a low heat, add
the pine nuts and bring to the boil.

Simmer for 3
minutes then remove from the heat and leave to stand
for 6 hours. Drain well and leave to dry.

Heat the oil until moderately hot and deep-fry the
pine nuts until golden brown.

Drain well then
spread out and leave to cool, stirring occasionally
so that they do not stick together.
