Chinese Nibbles and Drinks Recipes - Hot Lotus Tea Recipe

Ingredients

  • 900 ml/1 1/2 pts/3 3/4 cups water

  • 2.5 ml/1/2 tsp bicarbonate of soda (baking soda)

  • 450 g/1lb lotus seeds

  • 2 pts/5 cups water

  • 225 g/8 oz brown sugar

  • 2 eggs, lightly beaten


Method:

  1. Bring the water to the boil, stir in the bicarbonate of soda, pour over the lotus seeds and leave to stand for 10 minutes.

  2. Rub the seeds with your fingers to remove the husks. Rinse and drain.

  3. Bring the second quantity of water to the boil, stir in the sugar until dissolved then add the lotus seeds, cover and simmer for 1 hour.

  4. Gradually stir in the eggs, remove from the heat and serve at once.
