Chinese Salads Recipes - Marinated Cucumber Recipe

Ingredients

  • 1 cucumber, thinly sliced

  • 5ml/1 tsp salt

  • 120ml/1/2 cup wine vinegar

  • 45ml/3 tbsp sugar

  • 75ml/5 tbsp water


Method:

  1. Sprinkle the cucumber with salt and leave to stand for 30 minutes.

  2. Heat the vinegar then stir in the sugar and water, stirring until the sugar dissolves.

  3. Bring to the boil and boil for 2 minutes. Remove from the heat and leave to cool.

  4. Add the cucumbers and leave to stand for several hours before serving.
