Chinese Salads Recipes - Pork Salad Recipe

Ingredients

  • 450g/1 lb green beans

  • 10ml/2 tsp salt

  • 250ml/8 fl oz/1 cup wine vinegar

  • 450g/1 lb cooked pork, thinly sliced

  • 120ml/1/2 cup mild mustard

  • 30ml/2 tbsp chopped flat-leaved parsley


Method:

  1. Blanch the beans in boiling water for about 10 minutes until just tender but still crisp. Drain well.

  2. Mix with half the salt and half the wine vinegar and leave to marinate for 2 hours.

  3. Meanwhile, mix the remaining salt and wine vinegar with the pork and mustard and leave to marinate.

  4. Mix the pork with the beans and serve garnished with parsley.
