Chinese Salads Recipes - Sesame Chicken Salad Recipe

Ingredients

  • 15ml/1 tbsp sesame seeds

  • 3 chicken breasts

  • 1.5lt/6 cups water

  • 30ml/2tbsp soy sauce

  • 2.5ml/1/2 tsp salt

  • 2.5ml/1/2 tsp five-spice powder

  • 3 stalks celery, sliced

  • 15ml/1 tbsp sesame oil

  • 15ml/1 tbsp groundnut (peanut) oil

  • pinch of ground ginger

  • pinch of freshly ground pepper


Method:

  1. Toast the sesame seeds in a dry pan until golden brown. Place the chicken, water, 15ml/1 tbsp soy sauce, salt and five-spice powder in a large saucepan.

  2. Bring to the boil, cover and simmer for 20 minutes. Remove from the heat and leave the chicken to stand in the water for 1 hour.

  3. Remover the chicken, reserving the stock and drain. Remove and discard the bones and cut the meat into thick slices.

  4. Bring the stock back to the boil, add the celery and cook for about 3 minutes until it is tender but still crisp. Drain well.

  5. Mix together the remaining soy sauce with the oils, ginger and pepper and add the chicken and celery.

  6. Toss well, transfer to a serving dish and serve sprinkled with sesame seeds.
