Chinese Tofu Recipes - Tofu with Black Bean Sauce Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 2 cloves garlic, crushed

  • 4 spring onions (scallions), sliced

  • 60 ml/4 tbsp black bean sauce

  • 450 g/1 lb tofu, cubed

  • 15 ml/1 tbsp chicken stock

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry


Method:

  1. Heat the oil and fry the garlic until light golden. Add the spring onions and stir-fry for 1 minute.

  2. Add the tofu and stir-fry carefully for 2 minutes until golden.

  3. Add the stock, soy sauce and wine or sherry, bring to the boil and stir-fry for about 1 minute.
