Chinese Vegetables Recipes - Asparagus with Clams Recipe

Ingredients

  • 120ml/1/2 cup peanut oil

  • 1 red chili pepper, cut into strips

  • 2 spring onions, cut into strips

  • 2 slices ginger root, shredded

  • 225g/8oz asparagus, cut into pieces

  • 30ml/2 tbsp thick soy sauce

  • 2.5ml/1/2 tsp sesame oil

  • 225g/8oz clams, soaked and scrubbed


Method:

  1. Heat the oil and stir-fry the chili pepper, spring onions and ginger for 30 seconds.

  2. Add the asparagus and soy sauce, cover and simmer until the asparagus is almost tender.

  3. Add the sesame oil and clams, cover and cook until the clams open.

  4. Discard any clams that have not opened and serve at once.
