Chinese Vegetables Recipes - Asparagus with Clams Recipe
Ingredients

120ml/1/2 cup
peanut oil
-
1 red chili
pepper, cut into strips
-
2 spring
onions, cut into strips
-
2 slices
ginger root, shredded
-
225g/8oz
asparagus, cut into pieces
-
30ml/2 tbsp
thick soy sauce
-
2.5ml/1/2 tsp
sesame oil
-
225g/8oz
clams, soaked and scrubbed
Method:
-
Heat the oil and stir-fry the chili pepper, spring
onions and ginger for 30 seconds.
-
Add the asparagus
and soy sauce, cover and simmer until the asparagus
is almost tender.
-
Add the sesame oil and clams,
cover and cook until the clams open.
-
Discard any
clams that have not opened and serve at once.
