Chinese Vegetables Recipes - Aubergine with Basil  Recipe

Ingredients

  • 60ml/4 tbsp peanut oil

  • 2 aubergines (eggplants)

  • 50ml/4 tbsp water

  • 2 cloves garlic crushed

  • 1 red chili pepper, diagonally sliced

  • 45ml/3 tbsp soy sauce

  • 1 large bunch basil


Method:

  1. Heat the oil and fry the aubergine until lightly browned.

  2. Add the water, garlic, chili pepper and soy sauce and stir-fry until the aubergine changes color.

  3. Add the basil and stir-fry until the leaves are wilted. Serve at once.
