Chinese Vegetables Recipes - Baked Onions Recipe

Ingredients

  • 8 large onions

  • salt and freshly ground pepper

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 120 ml/4 fl oz/1/2 cup water

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 15 ml/1 tbsp chopped fresh parsley


Method:

  1. Put the onions in a pan and just cover with boiling salted water. Cover and simmer for 5 minutes then drain.

  2. Arrange the onions in an ovenproof dish, season with salt and pepper and brush with oil.

  3. Pour in the water, cover and bake in a preheated oven at 190C/375 F/gas mark 5 for 1 hour.

  4. Blend the corn flour with a little water and stir it into the onion liquid.

  5. Bake for a further 5 minutes, stirring occasionally, until the sauce thickens. Serve garnished with parsley.
