Chinese Vegetables Recipes - Bamboo Shoots with
Mushrooms Recipe
Ingredients

8 dried Chinese
mushrooms
-
45 ml/3 tbsp
groundnut (peanut)
-
350 g/12 oz
bamboo shoots, cut
into strips
-
30 ml/2 tbsp soy
sauce
-
5 ml/1 tsp brown
sugar
-
15 ml/1 tbsp
corn flour
(cornstarch)

45 ml/3 tbsp water
Method:

Soak the mushrooms in warm water for 30 minutes then
drain. Discard the stalks and slice the caps.

Heat the oil and stir-fry the mushrooms for 2
minutes. Add the bamboo shoots and stir-fry for 3
minutes.

Add the soy sauce and sugar and stir well until
heated through. Transfer the vegetables to a warmed
serving plate using a slotted spoon.

Mix the corn flour and water to a paste and stir it
into the pan.

Simmer, stirring, until the sauce clears and
thickens then pour it over the vegetables and serve
at once.
