Ingredients

bamboo
shoots

5 ml/1
tsp rice
wine or
dry
sherry

pinch of
salt

ml/1/2
cup
chicken
stock
-
100 g/4
oz
spinach
-
2.5
ml/1/2
tsp
sesame
oil
Method:
-
Heat the oil and fry the bamboo
shoots for 1 minute. Add the wine or sherry, salt
and stock, being to the boil and simmer for 3
minutes.

Add the spinach and simmer
until the spinach ahs wilted and the liquid reduced
slightly.
-
Transfer to a warmed serving
bowl and serve sprinkled with sesame oil.
