Chinese Vegetables Recipes - Bamboo Shoots Spinach Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 450 g/1lb bamboo shoots

  • 5 ml/1 tsp rice wine or dry sherry

  • pinch of salt

  • 120 ml/1/2 cup chicken stock

  • 100 g/4 oz spinach

  • 2.5 ml/1/2 tsp sesame oil


Method:

  1. Heat the oil and fry the bamboo shoots for 1 minute. Add the wine or sherry, salt and stock, being to the boil and simmer for 3  minutes.

  2. Add the spinach and simmer until the spinach ahs wilted and the liquid reduced slightly.

  3. Transfer to a warmed serving bowl and serve sprinkled with sesame oil.
