Chinese Vegetables Recipes - Bean Sprouts and Peppers Recipe

Ingredients

  • 225 g/8 oz bean sprouts

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2 dried chili peppers

  • 1 slice ginger root, minced

  • 1 red pepper, cut into strips

  • 1 green pepper, cut into strips

  • 90 ml/6 tbsp chicken stock


Method:

  1. Blanch the bean sprouts in boiling water for 3 minutes then drain.

  2. Heat the oil and fry the whole chili peppers for about 3 minutes then discard the peppers.

  3. Add the ginger and peppers to the pan and stir-fry for 3 minutes. Add the bean sprouts and stir-fry for 2 minutes.

  4. Add the stock, bring to the boil, cover and simmer for 3 minutes before serving.
