Chinese Vegetables Recipes - Bean Sprouts with Pork Recipe

Ingredients

  • 450 g/1lb bean sprouts

  • 100 g/4 oz lean pork, cut into strips

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 15 ml/1 tbsp rice wine

  • 15 ml/1 tbsp soy sauce

  • 5 ml/1 tsp sugar

  • 2.5 ml/1/2 tsp salt

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 75 ml/5 tbsp chicken stock


Method:

  1. Blanch the bean sprouts in boiling water for 3 minutes then drain.

  2. Toss the pork with the corn flour, wine or sherry, soy sauce, sugar and salt then leave to stand for 30 minutes.

  3. Heat half the oil and stir-fry the bean sprouts for 1 minute. Remove from the pan.

  4. Heat the remaining oil and stir-fry the pork until lightly browned. Add the stock, cover and simmer for 3 minutes.

  5. Return the bean sprouts to the pan and stir until heated through. Serve at once.
