Ingredients

6 slices bacon
-
2 cloves garlic,
crushed

2 spring onions,
chopped
-
1 auberinge
(eggplant), peeled and diced
-
4 tomatoes, skinned
and quartered
-
salt and freshly
ground pepper
Method:
-
Cut the rind off
the bacon and cut into chunks. Fry until lightly
browned.

Ad the garlic and
spring onions and stir-fry for 2 minutes.

Add the aubergine
and stir-fry for about 5 minutes until slightly
soft.
-
Carefully mix in
the tomatoes and season with salt and pepper.
-
Stir gently over
a low heat until heated through.
