Chinese Vegetables Recipes - Braised Aubergine with Tomatoes Recipe

Ingredients

  • 6 slices bacon

  • 2 cloves garlic, crushed

  • 2 spring onions, chopped

  • 1 auberinge (eggplant), peeled and diced

  • 4 tomatoes, skinned and quartered

  • salt and freshly ground pepper


Method:

  1. Cut the rind off the bacon and cut into chunks. Fry until lightly browned.

  2. Ad the garlic and spring onions and stir-fry for 2 minutes.

  3. Add the aubergine and stir-fry for about 5 minutes until slightly soft.

  4. Carefully mix in the tomatoes and season with salt and pepper.

  5. Stir gently over a low heat until heated through.
