Chinese Vegetables Recipes - Braised Aubergine Recipe

Ingredients

  • 1 aubergine (eggplant)

  • oil for deep-frying

  • 15 ml/1 tbsp groundnut (peanut) oil

  • 3 spring onions (scallions), chopped

  • 1 slice ginger root, chopped

  • 90 ml/6 tbsp chicken stock

  • 15 ml/1 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp black bean sauce

  • 15 ml/1 tbsp brown sugar

     


Method:

  1. Peel the aubergine and cut it into large cubes. Heat the oil and deep-fry the aubergine until soft and lightly browned. Remove and drain well.

  2. Heat the oil and fry the spring onions and ginger until lightly browned.

  3. Add the aubergine and stir well. Add the stock, wine or sherry, soy sauce, black bean sauce and sugar. Stir-fry for 2 minutes.
