Chinese Vegetables Recipes - Broad Bean Sauté Recipe

Ingredients

  • 450g/1 lb shelled broad beans

  • 60ml/4 tbsp peanut oil

  • 5ml/1 tsp salt

  • 10ml/2 tsp brown sugar

  • 75ml/5 tbsp chicken stock

  • salt

  • 2 spring onions, chopped


Method:

  1. Place the beans in a pan, just cover with water, bring to the boil and simmer until tender. Drain well.

  2. Heat the oil then add the beans and stir until well coated with oil.

  3. Add the sugar and stock and season to taste with salt. Stir-fry for 3 minutes. Stir in the spring onions and serve.
