Ingredients

g/8 oz broccoli florets

ml/2 tbsp groundnut
(peanut) oil

clove garlic, crushed

g/4 oz bamboo shoots,
sliced

ml/8 fl oz/1 cup chicken
stock

ml/1 tbsp soy sauce

ml/1 tbsp oyster sauce

ml/1 tbsp corn flour
(cornstarch)

ml/2 tbsp rice wine or
dry sherry
Method:

Parboil the broccoli in boiling water for 4 minutes
then drain well.

Heat the oil and fry the garlic
until golden brown. Add the broccoli and bamboo
shoots and stir-fry for 1 minute.

Add the stock, soy
sauce and oyster sauce, bring to the boil, cover and
simmer for 4 minutes.

Mix the corn flour and wine or
sherry, stir it into the pan and simmer, stirring,
until the sauce has thickened.
