Chinese Vegetables Recipes - Broccoli in Brown Sauce Recipe

Ingredients

  • 225 g/8 oz broccoli florets

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 1 clove garlic, crushed

  • 100 g/4 oz bamboo shoots, sliced

  • 250 ml/8 fl oz/1 cup chicken stock

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp oyster sauce

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 30 ml/2 tbsp rice wine or dry sherry


Method:

  1. Parboil the broccoli in boiling water for 4 minutes then drain well.

  2. Heat the oil and fry the garlic until golden brown. Add the broccoli and bamboo shoots and stir-fry for 1 minute.

  3. Add the stock, soy sauce and oyster sauce, bring to the boil, cover and simmer for 4 minutes.

  4. Mix the corn flour and wine or sherry, stir it into the pan and simmer, stirring, until the sauce has thickened.
