Chinese Vegetables Recipes - Carrots with Honey Recipe

Ingredients

  • 1 kg/2 lb small spring carrots

  • 20 ml/4 tsp groundnut (peanut) oil

  • 20 ml/4 tsp unsalted butter

  • 15 ml/1 tbsp water

  • 10 ml/2 tsp honey

  • 15 ml/1 tbsp chopped fresh coriander

  • 100 g/4 oz pine kernels

  • salt and freshly ground pepper


Method:

  1. Wash the carrots and cut the green down to 5 mm/1/4 in.

  2. Heat the oil and butter, add the water and honey and bring to the boil.

  3. Add the carrots and cook for about 4 minutes. Add the coriander and pine kernels and season with salt and pepper.
