Ingredients

6 dried Chinese
mushrooms
-
45 ml/3 tbsp
groundnut
(peanut) oil
-
1 Chinese
cabbage,
diced
-
1 red pepper, diced
-
2 green pepper, diced
-
225 g/8 oz
garlic sausage,
diced
-
120 ml/4 fl oz/1/2
cup chicken
stock
-
45 ml/3 tbsp
wine vinegar
-
20 ml/4 tsp soy
sauce
-
20 ml/4 tsp
honey
-
5 ml/1 tsp
corn flour
(cornstarch)
-
salt and freshly
ground pepper
-
20 ml/2 tbsp
chopped chives
Method:
-
Soak the mushrooms in warm water for 30 minutes then
drain. Discard the stalks and chop the caps.
-
Heat
the oil and stir-fry the mushroom, cabbage and
peppers for 5 minutes. Add the garlic sausage and
fry briefly.
-
Mix the stock with the wine vinegar,
soy sauce, honey and corn flour. Stir into the pan
and bring to the boil.

Season with salt and pepper
and simmer, stirring, until the sauce thickens.
Serve sprinkled with chives.
