Chinese Vegetables Recipes - Chinese Leaves with Mushrooms Recipe

Ingredients

  • 50 g/2 oz Chinese dried mushrooms

  • 450 g/1 lb Chinese leaves

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 15 ml/1 tbsp soy sauce

  • 5 ml/1 tsp salt

  • 5 ml/1 tsp sugar

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 10 ml/2 tsp sesame oil


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stems and slice the caps.

  2. Cut the head of Chinese leaves into thick slices. Heat half the oil, add the Chinese leaves and stir-fry for 2 minutes.

  3. Add the chicken stock, soy sauce, salt and sugar and stir-fry for about 4 minutes.

  4. Add the mushrooms and stir-fry until the vegetables are tender.

  5. Mix the corn flour with a little water, stir it into the sauce and simmer, stirring until the sauce clears and thickens. Serve sprinkled with sesame oil.
