Scallops Recipe
Ingredients
4 hearts Chinese leaves
600 ml/2 1/2 cups chicken stock
100 g/4 oz shelled scallops, sliced
5 ml/1 tsp corn flour (cornstarch)
Method:
Place the Chinese leaves and stock in a pan, bring
to the boil and simmer for about 10 minutes until
just tender.
Transfer the Chinese leaves to a warmed serving
plate and keep them warm. Pour out al but 250ml/1
cup of the stock.
Add the scallops
and simmer for a few minutes until the scallops are
tender.
Blend the corn
flour with a little water stir it into the pa and
simmer, stirring, until the sauce thickens slightly.
Pour over he Chinese leaves and serve.
