Chinese Vegetables Recipes - Chinese Leaves with Scallops Recipe

Ingredients

  • 4 hearts Chinese leaves

  • 600 ml/2 1/2 cups chicken stock

  • 100 g/4 oz shelled scallops, sliced

  • 5 ml/1 tsp corn flour (cornstarch)


Method:

  1. Place the Chinese leaves and stock in a pan, bring to the boil and simmer for about 10 minutes until just tender.

  2. Transfer the Chinese leaves to a warmed serving plate and keep them warm. Pour out al but 250ml/1 cup of the stock.

  3. Add the scallops and simmer for a few minutes until the scallops are tender.

  4. Blend the corn flour with a little water stir it into the pa and simmer, stirring, until the sauce thickens slightly. Pour over he Chinese leaves and serve.
