Chestnuts Recipe
Ingredients

450 g/1lb Chinese leaves, shredded
-
45 ml/3 tbsp groundnut (peanut) oil
-
100 g/4 oz water chestnuts, sliced
-
250 ml/8 fl oz/1 cup chicken stock
-
15 ml/1 tbsp soy sauce
-
15 ml/1 tbsp corn flour (cornstarch)

15 ml/1 tbsp water
Method:

Blanch the Chinese leaves in boiling water for 2
minutes then drain.

Heat the oil and stir-fry the
water chestnuts for 2 minutes. Add the Chinese leaves and stir-fry for 3
minutes.

Add the
chicken stock and soy sauce, bring to the boil,
cover and simmer for 5 minutes.
-
Mix the corn flour
and water to a paste, stir into the pan and simmer,
stirring, until the sauce clears and thickens.
