Chinese Vegetables Recipes - Chinese Leaves with Water Chestnuts Recipe

Ingredients

  • 450 g/1lb Chinese leaves, shredded

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 100 g/4 oz water chestnuts, sliced

  • 250 ml/8 fl oz/1 cup chicken stock

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 15 ml/1 tbsp water


Method:

  1. Blanch the Chinese leaves in boiling water for 2 minutes then drain.

  2. Heat the oil and stir-fry the water chestnuts for 2 minutes. Add the Chinese leaves and stir-fry for 3 minutes.

  3. Add the chicken stock and soy sauce, bring to the boil, cover and simmer for 5 minutes.

  4. Mix the corn flour and water to a paste, stir into the pan and simmer, stirring, until the sauce clears and thickens.
