Sauce Recipe
Ingredients

30 ml/2 tbsp groundnut
(peanut) oil
-
1 clove garlic, crushed
-
5 ml/1 tsp salt
-
15 ml/1 tbsp chili
bean sauce
-
450 g/1 lb courgettes
(zucchini), thickly sliced
-
30 ml/2 tbsp rice wine
or dry sherry
-
45 ml/3 tbsp water
-
15 ml/1 tbsp sesame oil
Method:
-
Heat the oil and fry the garlic, salt and chili
bean sauce for a few seconds.

Add the courgettes and
stir-fry for 3 minutes until lightly browned.
-
Add
the remaining ingredients, including sesame oil to
taste, and stir-fry for 1 minute.
