Chinese Vegetables Recipes - Courgette in Black Bean Sauce Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 1 clove garlic, crushed

  • 5 ml/1 tsp salt

  • 15 ml/1 tbsp chili bean sauce

  • 450 g/1 lb courgettes (zucchini), thickly sliced

  • 30 ml/2 tbsp rice wine or dry sherry

  • 45 ml/3 tbsp water

  • 15 ml/1 tbsp sesame oil


Method:

  1. Heat the oil and fry the garlic, salt and chili bean sauce for a few seconds.

  2. Add the courgettes and stir-fry for 3 minutes until lightly browned.

  3. Add the remaining ingredients, including sesame oil to taste, and stir-fry for 1 minute.
