Method:

Rinse the greens then dry thoroughly. Heat the oil
and deep-fry the greens in batches over a medium
heat until they float to the surface.

Remove from the oil and drain well on kitchen paper.
Sprinkle with salt and sugar and toss together
gently. Serve cold.
