Chinese Vegetables Recipes - Crispy Seaweed Recipe

Ingredients

  • 750 g/1 1/2 lb spring greens, very finely shredded

  • oil for deep-frying

  • 5 ml/1 tsp salt

  • 10 ml/2 tsp caster sugar


Method:

  1. Rinse the greens then dry thoroughly. Heat the oil and deep-fry the greens in batches over a medium heat until they float to the surface.

  2. Remove from the oil and drain well on kitchen paper. Sprinkle with salt and sugar and toss together gently. Serve cold.
