Chinese Vegetables Recipes - Cucumber with Prawns Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 100 g/4 oz peeled prawns

  • 1 cucumber, peeled and thickly sliced

  • 30 ml/2 tbsp soy sauce

  • 5 ml/1 tsp rice wine or dry sherry

  • 5 ml/1 tsp brown sugar

  • salt

  • 45 ml/3 tbsp water


Method:

  1. Heat the oil and stir-fry the prawns for 30 seconds. Add the cucumber and stir-fry for 1 minute.

  2. Add the soy sauce, wine or sherry and sugar and season with salt.

  3. Stir-fry for 3 minutes, adding a little water if necessary. Serve immediately.
