Chinese Vegetables Recipes - Cucumber with Prawns Recipe
Ingredients

45 ml/3 tbsp
groundnut (peanut) oil

100 g/4 oz peeled
prawns
-
1 cucumber, peeled
and thickly sliced
-
30 ml/2 tbsp soy
sauce
-
5 ml/1 tsp rice
wine or dry sherry
-
5 ml/1 tsp brown
sugar
-
salt
-
45 ml/3 tbsp water
Method:

Heat the oil and stir-fry the prawns for 30 seconds.
Add the cucumber and stir-fry for 1 minute.

Add the
soy sauce, wine or sherry and sugar and season with
salt.

Stir-fry for 3 minutes, adding a little water
if necessary. Serve immediately.
