Chinese Recipes - Cucumber with Sesame Oil Recipe
Ingredients
1 large cucumber
salt
30ml/2 tbsp sesame oil
2.5ml/1/2 tsp sugar
Method:
Peel the cucumber and cut in half lengthways. Scoop out the seeds then cut into thick slices.
Arrange the cucumber slices in a colander and sprinkle generously with salt.
Leave to stand for 1 hour then press out as much moisture as possible.
Heat the oil and stir-fry the cucumbers for 2 minutes until softened. Stir in the sugar and serve at once.
