Chinese Vegetables Recipes - Curried Onions with Peas Recipe

Ingredients

  • 450 g/1lb pearl onions

  • 10 ml/2 tsp salt

  • 225 g/8 oz peas

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 10 m/2 tsp curry powder

  • freshly ground pepper


Method:

  1. Place the onions in a pan and just cover with boiling water. Season with 5 ml/1 tsp of salt and boil for 5 minutes. Cover and boil for a further 10 minutes.

  2. Add the peas and cook for a further 5 minutes then drain.

  3. Heat the oil and fry the curry powder, remaining salt and remaining pepper for 30 seconds.

  4. Add the drained vegetables and stir-fry until hot and glazed with the curry oil.
