ml/6 tbsp groundnut
(peanut) oil

spring onion, cut into
strips

clove garlic, crushed

red chili pepper, cut
into strips

g/8 oz bamboo shoots

ml/1 tbsp thick soy
sauce

2.5
ml/1/2 tsp sesame oil
Method:

Heat the oil and stir-fry the spring onion, garlic
and chili pepper for 30 seconds.

Add the bamboo
shoots and stir-fry until just tender and well
coated in the spices.

Add the soy sauce and sesame
oil and stir-fry for a further 3 minutes. Serve at
once.
