Chinese Vegetables Recipes - Fried Spring Vegetables Recipe
Ingredients
45 m1l3 tbsp groundnut
(peanut) oil
2 cloves garlic,
crushed
salt
30 ml/2 tbsp soy sauce
30 ml/2 tbsp hoi sin
sauce
6 spring onions
(scallions), chopped
1 red pepper. chopped
1 green pepper, chopped
100 g/4 oz bean sprouts
225 g/8 oz mange tout
(snow peas), cut into 4
5 ml/1 tsp tomato puree
(paste)
5 ml/1 tsp corn flour
(cornstarch)
120 ml/4 fl oz/1/2 cup
chicken stock
60 ml/4 tbsp
chopped chives
few drops of lemon juice
Method:
Heat the oil and fry the garlic and salt until
lightly browned.
Add the soy and hoi sin sauces and
stir-fry for 1 minute. Add the peppers, bean sprouts
and mange tout and cook, stirring, until they are
just tender but still crisp.
Stir the tomato puree
and corn flour into the stock then add it to the pan.
Bring to the boil and simmer, stirring, until the
sauce thickens. Sprinkle with lemon juice, stir,
then serve sprinkled with chives.
