Chinese Vegetables Recipes - Fried Spring Vegetables Recipe

Ingredients

  • 45 m1l3 tbsp groundnut (peanut) oil

  • 2 cloves garlic, crushed

  • salt

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp hoi sin sauce

  • 6 spring onions (scallions), chopped

  • 1 red pepper. chopped

  • 1 green pepper, chopped

  • 100 g/4 oz bean sprouts

  • 225 g/8 oz mange tout (snow peas), cut into 4

  • 5 ml/1 tsp tomato puree (paste)

  • 5 ml/1 tsp corn flour (cornstarch)

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 60 ml/4 tbsp chopped chives

  • few drops of lemon juice


  • Method:

    1. Heat the oil and fry the garlic and salt until lightly browned.

    2. Add the soy and hoi sin sauces and stir-fry for 1 minute. Add the peppers, bean sprouts and mange tout and cook, stirring, until they are just tender but still crisp.

    3. Stir the tomato puree and corn flour into the stock then add it to the pan.

    4. Bring to the boil and simmer, stirring, until the sauce thickens. Sprinkle with lemon juice, stir, then serve sprinkled with chives.
