Chinese Vegetables Recipes - Mange tout with Bamboo Shoots Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 100 g/4 oz minced (ground) pork

  • 100 g/4 oz mushrooms

  • 225 g/8 oz bamboo shoots, sliced

  • 225 g/8 oz mange tout (snow peas)

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 5 ml/1 tsp sugar

  • 120 ml/4 fl oz/1/2 cup chicken stock


Method:

  1. Heat the oil and fry the pork until lightly browned. Stir in the mushrooms and bamboo shoots and stir-fry for 2 minutes.

  2. Add the mange tout and stir-fry for 2 minutes. Sprinkle with soy sauce.

  3. Mix the corn flour, sugar and stock to a paste, stir into the pan and simmer, stirring, until the sauce thickens.
