Chinese Vegetables Recipes - Mange tout with Mushrooms and Ginger Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 3 spring onions (scallions), sliced

  • 1 slice ginger root, minced

  • 225 g/8 oz mushrooms, halved

  • 300 ml/2/3 cup chicken stock

  • 10 ml/2 tsp corn flour (cornstarch)

  • 15 ml/1 tbsp water

  • 15 ml/1 tbsp oyster sauce

  • 225 g/8 oz mange tout (snow peas)


Method:

  1. Heat the oil and fry the spring onions and ginger until lightly browned.

  2. Add the mushrooms and stir-fry for 3 minutes. Add the stock, bring to the boil, cover and simmer for 3 minutes.

  3. Blend the corn flour to a paste with the water and oyster sauce, stir it into the pan and simmer, stirring, until the sauce thickens.

  4. Stir in the mange tout and heat through before serving.
