Chinese Vegetables Recipes - Mixed Vegetables with Ginger Recipe

Ingredients

  • 100 g/4 oz cauliflower florets

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2 slices ginger root, minced

  • 1 spring onion (scallion), chopped

  • 100 g/4 oz bamboo shoots, sliced

  • 100 g/4 oz mushrooms, sliced

  • 100 g/4 oz Chinese cabbage, shredded

  • 30 ml/2 tbsp soy sauce

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • salt and freshly ground pepper


Method:

  1. Blanch the cauliflower in boiling water for 3 minutes then drain. heat the oil and stir-fry the ginger for 1 minute.

  2. Add the vegetables and stir-fry for 3 minutes until coated with oil. Add the soy sauce and stock and season with salt and pepper.

  3. Stir-fry for a further 2 minutes until the vegetables are just tender but still crisp.
