Chinese Vegetables Recipes - Mixed Vegetables Recipe
Ingredients

2 onions
-
30ml/2 tbsp peanut oil
-
15ml/1 tbsp grated ginger
root

225g/8oz broccoli florets
-
225g/8oz spinach, chopped
-
225g/8oz mange tout
-
4 stalks celery, diagonally
sliced
-
6 spring onions, diagonally
sliced
-
175ml/3/4 cup vegetable
stock
Method:

Cut the onions into wedges and separate the layers.
Heat the oil and stir-fry the onions, ginger and
broccoli for 1 minute.

Add the remaining vegetables
and toss lightly. Add the stock and toss until the
vegetables are completely coated.

Bring to the boil,
cover and simmer for 3 minutes until the vegetables
are tender but still crisp.
