Chinese Vegetables Recipes - Mixed Vegetables Recipe

Ingredients

  • 2 onions

  • 30ml/2 tbsp peanut oil

  • 15ml/1 tbsp grated ginger root

  • 225g/8oz broccoli florets

  • 225g/8oz spinach, chopped

  • 225g/8oz mange tout

  • 4 stalks celery, diagonally sliced

  • 6 spring onions, diagonally sliced

  • 175ml/3/4 cup vegetable stock


Method:

  1. Cut the onions into wedges and separate the layers. Heat the oil and stir-fry the onions, ginger and broccoli for 1 minute.

  2. Add the remaining vegetables and toss lightly. Add the stock and toss until the vegetables are completely coated.

  3. Bring to the boil, cover and simmer for 3 minutes until the vegetables are tender but still crisp.
