Chinese Vegetables Recipes - Mushrooms with Anchovy Sauce Recipe

Ingredients

  • 15 ml/1 tbsp groundnut (peanut) oil

  • 450 g/1lb button mushrooms

  • 2 shallots, sliced

  • 1 stick lemon grass, chopped

  • 1 large tomato, diced

  • 60 ml/4 tbsp chopped flat-leaved parsley

  • 20 ml/4 tsp anchovy paste

  • 50 g/2 oz/1/2 cup butter

  • salt and freshly ground pepper

  • 4 slices bread

  • g anchovy fillets


Method:

  1. Heat the oil and fry the mushrooms, shallots and lemon grass until lightly browned. Add the tomato and half the parsley and stir well.

  2. Mix in the anchovy paste and the butter, cut into flakes. Season with salt and pepper.

  3. Toast the bread then sprinkle with the remaining parsley.

  4. Arrange the anchovy fillets on top and serve with the mushrooms.
