Chinese Vegetables Recipes - Mushrooms with  Bamboo Shoots and Mange tout Recipe

Ingredients

  • 8 dried Chinese mushrooms

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 100 g/4 oz mange tout (snow peas)

  • 100 g/4 oz bamboo shoots, sliced

  • 60 ml/4 tbsp stock

  • 30 ml/2 tbsp soy sauce

  • 5 ml/1 tsp sugar


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and slice the caps.

  2. Heat the oil and fry the mange tout for about 30 seconds then remove from the pan.

  3. Add the mushrooms and bamboo shoots and stir-fry until well coated with oil. Add the stock, soy sauce and sugar, bring to the boil, cover and simmer gently for 3 minutes.

  4. Return the mange tout to the pan and simmer, uncovered, until heated through. Serve at once.
