Chinese Vegetables Recipes - Mushrooms and Bamboo Shoots Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 5 ml/1 tsp salt

  • 1 clove garlic, crushed

  • 225 g/8 oz bamboo shoots, sliced

  • 225 g/8 oz mushrooms, sliced

  • 45 ml/3 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 15ml/1 tbsp sugar

  • 15ml/1 tbsp corn flour (cornstarch)

  • 90 ml/6 tbsp chicken stock


Method:

  1. Heat the oil and fry the salt and garlic until the garlic turns light golden.

  2. Add the bamboo shoots and mushrooms and stir-fry for 3 minutes. Add the soy sauce, wine or sherry and sugar and stir-fry for 3 minutes.

  3. Mix the corn flour and stock and stir it into the pan. Bring to the boil, stirring, then simmer for a few minutes until the sauce thickens and clears.
